Yellow Tea -FBOP (Medium Grown)
Following the initial withering and pan-frying process, akin to that of green tea production, the tea leaves are enveloped in a cloth and allowed to undergo a subtle oxidation and fermentation stage. This phase, commonly known as 'yellowing,' imparts the distinctive yellow hue to the tea and results in a unique flavour profile. The taste of yellow tea can be characterized as mellow, smooth, and slightly sweet, exhibiting fewer grassy or vegetal notes when compared to green tea. The yellowing process is believed to eliminate some of the astringency and grassy undertones typically associated with green tea, while preserving the tea's freshness and natural sweetness.
